Hmmm, a difficult one. Not any of the fight scenes as the anime got rid of most of the blood... As far as memory serves, I think the early team 7 bonding episodes were pretty good, apart from Sasuke being mangled more in the manga XD
the Rock Lee and Gaara fight. :) most of the fights i guess cos they were all just a blur in the manga. XP but then, for certain gruesome fights they toned them down which was a letdown. (eg. Zaku's exploding arms, Neji's gaping hole, Sasuke impaling Naruto to name a few)
I like the Lee/Gaara fight, but I don't like how the style is different from the other fights. If you're gonna use 3d backgrounds and stuff in one fight, why not the others, right? But hey, that's just me.
yeah, i can also say they only spend on certain big fights. you notice that some fights are differently animated, and i could almost say it's unfair they don't do it to all the fights. (i actually think they reserve the better animation for most of the Sasuke fights.)
Remember the Naruto/Kimimaro fight? That was awful. Then again, the fight itself was awful. It was just like...HEY LET'S RUN AT HIM THREE AT A TIME AND COMPLETELY WASTE OUR ADVANTAGE OF NUMBERS, GUYS!
And I agree with you there. Well...except for episode 133. Though that episode was strange...it had the worst art in the series and the best animation in the series, both at the same time.
Episode 134 in the anime, which is when Naruto and Sasuke face off for the final time, followed by Kakashi taking Naruto back. That was an absolutely fantastic episode, and I almost cried tears of joy when I watched it.
I think episode 133 and 134 were wonderful. The Sasuke/Naruto showdown. I think the art in 133 was gorgeous especially, it was fast paced and flowed so beautifully. \(*_* )/
In most anime the animation is like, screenshots with moving backgrounds, if that makes sense... but in 133 it was just lovely (though I think a lot of people disagree with me and I cannot understand it). ; 3;

Anyway, those were well translated, I think.
