When Sasuke has fought the other S-ranked ninjas, most of the time he's been at a bit of an advantage. Orochimaru was ill when Sasuke fought him, and Itachi wanted Sasuke to win, so he probably wasn't fighting his hardest. Not to mention he was going blind. When he fought Deidara, that was a true S-ranked fight, and Sasuke got beaten up fairly well. Though, if things had gotten really bad, Madara may have stepped in to help Sasuke.
